Day 5- Turkey Meatballs

Ingredients for Turkey Meatballs

  • 1 lb Light Ground Turkey
  • 1 lb Dark Ground Turkey
  • 1 Granny Smith Apple
  • 1 Carrot
  • 2 Eggs
  • 2 T Almond Flour
  • Salt and Pepper

INGREDIENTS For Tomato Sauce

  • 1 28 oz can Diced Tomatoes
  • 1 Onion
  • 2 Cloves of Garlic
  • 1 Carrot
  • 1 t Dried oregano
  • Salt and Pepper
  • Olive Oil

Directions for Turkey Meatballs

Makes 20 large meatballs.

Chop apple into 1/4” cubes and grate carrots. These will keep your meatballs from being too dry!

Combine turkey meat, two eggs, apple, carrot, almond flour and salt/pepper in a large bowl. Mix well with your hands and form into large meatballs (somewhere between the size of a golf and lacrosse ball).  We cook ours on wire racks to drain off excess fat, but you can also use a rimmed baking sheet.

Cook at 400 for 20-25 minutes. Poultry should be cooked completely through. While those are baking, it’s time to make your sauce.

Directions for Tomato Sauce

Chop onion and grate carrots and sauté over medium heat in olive oil.  Add minced garlic, being careful not to burn. Add tomatoes and reduce heat. Stir in remaining spices and add salt and pepper to taste. Reduce until meatballs are ready to serve.

And that’s it! This makes enough meatballs to eat for 2-3 meals for two people. Serve over spaghetti squash, broccoli or alongside another vegetable.
